Lemonade Cookies

I just came across a recipe while cleaning that I used to love to make but I am not able to make here in Spain because I can't get the key ingredient. I thought I would post it here so that when I am in the States this coming summer/fall I can go online and get it and make it. Plus, as an added benefit, this delicious recipe can be shared and enjoyed by anyone reading this (all 3 of you -- and that is being generous since I am sure most of my friends who used to come here and read my posts have given up on my ever posting again). These are a nice lemony cookie perfect for bringing to a potluck, adding to a cookie tray at the holidays, or for anyone who is looking for something without chocolate. (Is that even possible?)

Lemonade Cookies

1 cup butter
1 cup sugar
2 eggs
3 cups flour
1 teaspoon baking soda
1 (6 oz) can frozen lemonade concentrate thawed and divided. (I like to use pink lemonade.) BE SURE TO ONLY USE 1/2 CUP IN THE DOUGH.

Preheat oven to 400 degrees F
Cream together butter and sugar. Add eggs, one at a time. Combine flour and baking soda. Stir into the butter mixture, alternating with 1/2 cup of the thawed lemonade concentrate.

Drop by teaspoons on ungreased cookie sheets. Bake 7 or 8 minutes until lightly brown. Remove from oven and brush with lemonade concentrate and sprinkle with sugar. Transfer to cooling rack.

Yield: 3 1/2 dozen cookies.
